Turkey pesto melt

Serves 4

Tip: Keep leftover Basil Pesto Mayo in the fridge for up to 2 weeks. Use on sandwiches or as a cold pasta salad dressing.

  1. Add 1 cup fresh basil leaves.
  2. Add 1/4 cup pumpkin seeds.
  3. Add 1/4 cup fresh Parmesan cheese.
  4. Add 3 cloves minced garlic.
  5. Add 1/2 teaspoon kosher salt.
  6. Process until well-blended.
  7. Add 1 cup reduced fat mayonnaise.
  8. Lightly coat 4 pieces whole-wheat bread with cooking spray and place coated side down.
  9. Spread 1 1/2 tablespoons basil pesto mayo.
  10. Place 1/4 cup mozzarella cheese.
  11. Add 4 ounces reduced-sodium sliced turkey.
  12. Add 2 slices tomato.
  13. Bake 10 to 15 minutes at 375 F.
